This Southern Thai menu opens with a fragrant bowl of spiced cashew nuts mixed with lime and dried chilli to dip into while preparing the meal.

The stars of the show, grilled chicken thighs, are marinated in coconut “golae” curry sauce and accompanied by a fresh cucumber relish. The chicken is offset by citrusy papaya salad and the linchpin for every Thai meal: a steaming hot bowl of jasmine rice.

Finish with som saa’s Thai tea fudge and sticky rice oolong tea. 

Below are some recipes that work perfectly with our pastes and sugar however these recipes also work well as a general guide to cooking curries with our som saa pastes.  So please do feel free to vary the ingredients used (especially if you are lucky enough to have access to Thai supermarket, and can lay you hands on some more exotic produce!).
